It's a problem with USB Audio. I think it has to do with streaming DATA 
to both busses at the same time. (In the case of iTunes, one 
application is sending audio files to the iPod, and audio DATA thru the 
USB Audio)

When listening to ANY audio, and copying files to my iPod, the audio 
would lock up (in all applications).

When this happens, unplug your speakers, plug them back in, and watch 
the kernel panic. (unless they fixed it. I haven't had this problem 
since 10.2, but I also avoid listening to audio while copying files 
over firewire.)
