One of several solutions, Final Vinyl from Griffin Technologies:

Final Vinyl is an audio recording and editing application designed for the Griffin iMic and Powerwave audio devices. It features a digital audio interface and is intended to complement iTunes or Quicktime Player."

iMic is about $50, and it is small and effective, but it's input connector is a small minijack.  PowerWave is $99 or so, and is much more versatile, and it has RCA jacks for input.  Final Vinyl has built-in RIAA correction.
