I also have OS 9 on my cube along with Panther. It works fine  
although I never use it.
OSX will want more RAM than OS9, I'd consider 512 as a minumum.

My cube is currently connected to a Dell 20" LCD display (Dell2005FPW).
All I needed was the VGA right angle adaptor that shipped with the cube.
It doesn't get you the USB ports and power switch that the stock ADC  
(?) monitor offers but as far as display function goes it's wonderful.

For a printer I'm using a Brother MFC420N which can connect through  
USB or through ethernet.
I'm not sure the 420 is heavy duty enough for real office use but I  
would suggest you look at some variety of network printer.
