1 Gig or Dual 867 ?

I've finally decided to move up from my modified Beige G3 MT to a new 
machine since the lack of AGP graphics has put a stop to increased 
video power (and Quartz Extreme).

Currently the new 1 Gig single processor machine and the discontinued 
Dual 867MH machine sell for the same price.

Which would you choose, and why?

My inclination would be to go with the newer (and therefor more 
debugged?) machine but I am afraid I will end up with Dual Processor 
envy.

I live in Photoshop, bbEdit, GoLive, Illustrator and dabble in Final 
Cut Pro.
