What happens to the cropped sections of your clip? I know iMovie is
non-destructive but when I tried editing this way I couldn't find the
parts of the clip that I cropped out. When using the Split at Play head
all the pieces remain in the clip panel. This way if I deleted too much
from a clip I can go back and add in the piece I removed earlier. If
there is an easy way to recover the cropped media I would love to hear
it.

Or even do the tutorial that comes with iMovie. Go to the Help menu.

To shorten a clip, you move the white triangles under the timeline so 
that the part you want to keep is in the yellow area. Then choose Crop

from the Edit menu (command K).
