Just to chime in...

Shoot normally and do the B&W in post.  There's a whole pile of color 
correction tricks that DV gives you, such as bumping up the reds to 
duplicate a #25 filter.  Shoot normally, throw in a cc filter, and then 
add the desat.  Play around with things until you get the look you want.

Gotta love a medium that gives you all the tricks of film for free, 
after you shoot.
