I found an answer in the Aug 2003 MacAddict page 21 to separate a part 
out of a soundtrack. Essentially:
1.Control-click the track in iTunes 3
2.Get info and go to options tab to choose start and stop times. Close 
dialog box.
3.Go to Advanced menu and click "convert selection"
ITunes will create a new soundtrack and leave the original untouched.
