There are a few ways  programs such as Elgato's Eye TV will do this 
there are also other ones depending on the quality of video you want 
Eye TV is probably middle of the road decent but if you need high 
quality look elsewhere, recently, a few months ago there was a review 
in macworld on a few of these units.  You could also get a Analog to 
firewire digital converter some digital camcorders will do this - 
(referred to as passthrough, it converts the analog TV to digital 
signal as it passes through).  You should be able to feed that right 
into iMovie and record it  or use a specific tool such as BTV pro.
