I found the themes inside the iDVD package:
/Applications/iDVD 3/iDVD.app/Contents/Resources/

You'll see the .theme files there.

It turns out that the .theme files are themselves packages. When you 
show their contents, open their Resources folders and you will find 
the music files, object graphics, etc.
