Why would this happen if using FCE for capture?  Doesn't it "know" how 
to handle DV format video?  That's what it's designed for after all...

Does FCE have a "low-res" setting like FCP?  If so, that's my guess -- 
it would only be capturing every other field of video (half res, 1/4 
full-screen size), making it look "chunky".  Make sure you're capturing 
at "high-res" or "full quality" or whatever it is (I'm not at my 
computer with FCP right now, so I don't know what the setting is 
called).
