There are several commercial, shareware, freeware. You can do a  
search on versiontracker

I use AudioCorder (shareware) I like it's flexibility and user  
interface. Audacity (open source, free) is good for editing your  
audio. It will also record.

If you already have an iMic, it has a recording application that  
comes with it.
