We're talking about Mail, the built-in Mail application for Mac OS X. 
There is no such preference. You might be talking about the contextual 
menu on attachments within messages, where there is a menu item called 
'View as Icon', which toggles to 'View in Place'. This has nothing to 
do with user pictures, though, which appear in the upper right corner 
of a received message.
