Server stalls regularly

Since installing Mac OS X server; I have a peculiar stalling problem 
that I cannot find the reason for:

Among other things, I have the iTunes songs on the server. Every 15 to 
20 minutes, playing stops for half a minute or so. iTunes is not the 
only affected application; the Finder may also display the spinning 
beach ball during this time.

The strange thing is that I used to have installed the normal Mac OS X 
on the exact same computer without any problems at all. It is strange 
as well that the server responds normally to pings during its stalls.

Can anybody shed some light on what might cause this problem?

Details follow:

Server setup:
- Blue-and-white G3, 448 MB RAM, 80 + 40 GB disks
- Mac OS X Server 10.2.6
- Servers running: AFP ("Apple"), FTP. All other servers available in 
Server Settings are off.
- No other software running on the server computer

Clients
- Power Mac G4 and PowerBook G3; no recongnizable difference regarding 
the stalling problem

Network
- Twisted pair Ethernet
- 100 Mbit switch
- Internet connection through an ADSL router (Internet traffic does not 
seem to be impaired during the stalls)
- one to three active computers (it does not seem to make a difference 
how many of them are switched on or what they are doing)
