[OT] Basic Photo skills... Re-Saving JPEG's

 I would like to fix up my iPhoto collection.  Basically I have a ton of
varied photos generally a around 500 K to 1 meg in size that come from my
Canon camera saved as JPEG's.

Basically, I would like to modify /repair some of the inferior ones in
Photoshop which I can easily do - such as contrast - sharpen - color levels
etc. 

But then, I would like to re-save them as JPEG's...  So my question is:

Q: What is the best way to re-save save a JPEG after modifying the picture?

1a -  format options = baseline standard - baseline optimized or
progressive?

1b - image quality = ? ( no need to save it at a  larger file size than the
original) - so which quality would closest match the original -  how do I
figure that out? Is there a "one size fits all" for this?
