Get yourself a decent audio interface:

It sounds like you already have Bias Peak, but for software you also 
want something for cleaning up the audio:

You might want a archival quality turntable as well:

My setup is pretty dated, but looks like this:
Sony Turntable plugged into
Sony DA50ES Receiver plugged into
Echo Audio Darla24 Soundcard in a
PowerMac 8500/180 running Mac OS 8.5, Bias Peak, and RayGun

I need to upgrade my audio software and possibly the audio interface 
as well as I want to move off of the 8500/180 onto either my 
G4/450AGP or G5 2x2.  The G4 makes the most sense.
