There are two versions of Skype for OS X:

1.5 is the non-beta (was just updated to 1.5.0.80)
2.0 is in beta and supports video

Also, just because lots of people use something on PC doesn't necessarily
mean it can't still be in beta. Take Gmail, for instance, which is still
labeled as beta.
