It might be an issue with the firmware on the drives.  I seem to 
remember that some IBM LVD SCSI drives can have special firmware, so 
that you're required to use their drives to boot their servers.  I 
don't know if this is what you're running into or not.

Also, you will want to make sure the Mac can handle keeping the drives cool.
