[P1] password protect folders in OS X

Actually, this was a very clever solution to my problem. Thank you, 
Kim Gammelgård for suggesting it.

After creating the encrypted disk image(s), simply DELETE the 
original files and folders from the drive.

I don't get it. How does creating a protected image of those folders 
protect them if the originals are still sitting on the HD?
