If you have the correct version of Acrobat you can edit the documents (Not
the free Version) prvided they are not locked and password protected.

Whenever I need to do something like that, I just select and copy the text
from the PDF and paste it into a text editor. Then I can  select/copy/delete
whatever I want or need for the document I'm working on. Of course, if you
only need a small part of a very large PDF file, it  can be a bit tedious...
