[iTunes] iPods not accessible in iTunes

I'm teaching a class where I have students bringing in different  
sound and music to play in class. When I plug their iPods in,
iTunes shows the iPod, but all their music is greyed out and  
unplayable - is there some preference setting that's doing this?
this has happened on a mini and a 3rd or 4th gen iPod.
