I've used the Griffin iMic, a Plantronics DSP-300 headset and the Apple
iSight as sound input for my Cube. With Panther, the DSP-300 works
flawlessly even though Plantronics has disowned Mac users after the
release of Mac OS X (Jaguar didn't support the volume and mute button
on the headset cord). There are actually quite a few USB & FireWire
hardware devices for sound input at various quality levels. Check out:
http://www.griffintechnology.com (iMic)
http://www.motu.com (mostly high-end)
http://www.m-audio.com (wide range)
http://www.edirol.com (Roland subdivision - wide range)

http://www.apple.com/isight

Good luck!
