You can still get 5.1 from Adobe's web site under downloads. Just use the one for OS 9, rather than OS X. The OS 9 version is actually a carbon app so it works fine under OS X or 9. Although it shows up wherever you download it as 5.0, if you do a "get info" you'll find it's actually 5.1. And it is much faster to start up and open PDF's than 6.0.
