It depends on how you work, of course, but if possible you might schedule a save session every hour or so, to shut Safari down, let it close up open windows, etc. and after 30 seconds or so, open it again, see it it's down to a manageable size again. I'm not a memory expert, especially on Safari, but just generally, I've found some programs are not efficient as tney could be, and require periodic turning off and back on again.
