Microsoft Entourage 5.1 addresses

I am working with Microsoft Entourage 5.1 for my email.  When I type in an
address,  many of addresses that do not appear in my address book are listed
as as potential choices.   Some of them are from spammers; others are people
I don't even know.  I would like to eliminate all but the address that I
actually want in my list.  Where are these other addresses stored?  Is there
something I can turn off so that they are not automatically stored?  It
really annoys me.
