The original poster failed to mention the version of Mail.app he's 
using. (Folks, if you include some basic details in your post, you're 
more likely to get useful replies...)

This advice is valid for Panther. If you're using Jaguar (Mail.app 
v1.2.5), run /Libary/Scripts/Mail Scripts/Manage SMTP Servers.scpt. You 
can't edit the server list from the prefs.
