Took the words right out of my mouth. I recommend creating a folder for all your "assets" that you will be creating for your video. Then save everything including your project file into it. This would be music, stills, PS graphics, etc. That way it's easy to burn a CD of the entire project, except the video - which is on tape with timecode. If you leave your music inside iTunes, it will be: HD/Users/YourUser/Music/iTunes/iTunesMusic/ArtistName/Album/Song If you change the location in iTunes Prefs, it will want to update your entire iTunes library to reflect the new location. Then, when you go back to regular music listening, you have to remember to switch it back to the default buried location.
