There is! Select the roll (click on its name, next to the little triangle),
then type a new name in the Title area. You can also change the date for the
roll.

Create a temporary folder on your desktop. Drag the photos you want to merge
into one roll into that folder. Delete the photos from your iphoto library.
Drag the photos in the temp folder into iPhoto. Merge-o-matic!
