Scott,
I usually scan my prints at 300 dpi. From that you have enough resolution to do any zooming and panning you want. If you are just going to show the image at it original size 72 dpi is fine. I used to also scan the images then take the time to crop them to fit the TV format. Then the light went on, now I just scan them in their native format then use the zoom when I import them into iMovie to fill the screen.
