If you're using Toast 6, just duplicate the app and choose different 
drives in each one.

You'd probably have to put them on different ATA busses, though, due to 
contention (not that the ATA-33 bus they're on couldn't handle the 
throughput, but I've had problems on an MDD G4 trying to use two optical 
drives simultaneously, but YMMV).
