In Toast 6 for OS X, Menu/Recorder/Recorder Settings/Advanced there are the options to "Write Disk" or "Write Session". Mine seems to default to Write Disk so I have to go there and select Write Session (almost) every time. When a multi-session disk is inserted, each session then shows in the Finder as a mounted CD with it's own title/label (that I'd have given it earlier at it's session.)
