iPhoto won't let you add text. It sounds like you don't have any Photoshop type software, so if you wanted to do it in a word processor, copy a photo that would make a good background into the document, make a text block and add your text. Now use Grab (/Applications/Utility folder) to take a screen shot. Save it and put it into iPhoto.
