in iMovie and FCE/P you can use the speed change to speed up the clips to effect stop motion, if your source is recorded video. I don't know if you are shooting one long clip or a bunch of shorter clips, and this will affect how the programs deal with the speed change. The new iMovie can shorten video clips or extract a still frame easily, as can Final Cut. Laying them out in the iMovie Project window in a linear fashion is also easy, and of course very easy and clear in FC.
