Entourage Questions - OT

I have two rather basic Entourage questions. Since this is rather off-topic,
please feel free to e-mail me off list with any solutions.

I am using Entourage 10.1.1 on OSX 10.2.5.

1. Is there a way to eliminate the six icons on the top left of the
Entourage window - the ones for mail, address book, calendar, etc. and allow
me to expand my mailbox list, so I won't have to scroll in it as much?

2. I know that there were ways to do this in OS9 through an AppleScript, but
am not sure how to implement one in OSX (the OS9 solution required a
scripting addition that I don't think is compatible with OSX). I would like
to associate signatures more easily with my outgoing mail - preferably, to
have the signature chosen based on the outgoing address, if not, at least
through a keyboard shortcut.

Any help is appreciated - please forgive the off topic post, and contact me
off-list with any viable solutions.
