Anything that plugs in to either video connector should work; a 
VGA-to-Mac (DB-15) adapter would work, along with many other similar 
devices for either video connector.

Of course, you could also buy a copy of OS X server, which is designed 
to run headless and is much better for remote administration.  It's 
fairly expensive, though; but if you're in education, you get a 
beautiful discount.
