Unless I'm missing what you're asking, it's right in 
Preferences...Signatures.

Or are you asking if you can tie a particular sig to a particular 
account? I'm not sure that you can do that currently, but it's just a 
matter of assigning muliple sigs and picking the right one from the 
drop down.
