When there's a phone, which is getting rarer and rarer, you connect your laptop to the airplane phone with a normal (RJ-11) phone cable and use a modem call as normal. Most often it doesn't work because these systems are not well maintained. When it does work, most often you get disconnected after a few seconds, time and again. Once in a while you establish a usable connection. Sometimes it helps to use the v.34 modem script instead of the v.90 ones. You might even try scripts that force even slower connections.

As a side note, many of us do rely on Ross Barkman's modem scripts for the Macintosh. Ross has done an incredible job over the years with scripts for MacOS (7, 8, 9 and probably before) and OS X. He has created modem scripts that make Macintoshes and PowerBooks work when they don't with the standard ones. He also provides scripts for GPRS internet connections through GSM cell phones. In addition, Ross has been incredible helpful to many many of us, including myself. On planes it sometimes helps to try slower scripts.
