missing?

yes - you may be missing hardware that allows "Direct Monitoring" - 
were the monitoring happens at the hardware where the signal comes in 
as opposed to after the computer has it...

depending on your hardware you should be able to achieve very usable 
latency levels on OS X...

if it's real bad you may just be able to turn of the monitoring for the 
channels being recorded - that way you don't hear the distracting delay
