os x server without a monitor

Hi

Is it possible to run/configure OS X server without a monitor? I've 
looked at all the documentation at Apple and it seems there is a remote 
monitoring tool but it does not say anything about configuring…

I want to run it on a Cube, should I upgrade the HD from 20GB to 40/60? 
I will have an external 120GB FireWire HD attached to it as well.
