[X Servers] Xserve only 100BaseTX

First of all you have to connect through a gigabit network (with 
correct cabling, gigabit-switches etc.)
If you are connecting directly to another Mac with gigabit, make sure 
it is a normal cat 5-cable, not crossover.
No other settings on the xServe that i know of..
