In Apple Mail, go to Mail>Preferences, click on the "General" pane, and 
pick Thunderbird from the "Default Email Reader" pop-up menu.

I imagine Thunderbird has a similar option in its preferences, but I 
don't use it, so I'm not sure where it would be.

You only need to do this in one place or the other; you don't have to 
change it both places.
