[X4U] Setting default mail account in Address Book/Mail.app?

In Mail.app it's very easy to set the default account to use when  
sending an e-mail (which one of my own addresses to send from). Does  
anybody know if there's a way to do the same thing for outgoing  
addresses? If Bob has 3 E-mail addresses in Address Book, can I  
specify the default one to use when Mail.app addresses mail to him?
