Are you a new OS X user? If so, you'll (probably) find that you get used to <cmd><shift><n> quickly. You might also try putting a new folder icon in the shelf at the top of brushed metal Finder windows. If you're using 10.2.8 (Jaguar), you're unlikely to have to deal with any new versions. So, if you really can't bear the 'new' way, go ahead and look for a way to modify the default behavior. I'd start at macosxhints.com. If you're using Panther (10.3.8), I wouldn't bother making a change. The chances are whatever modification you make will be undone by the next update.
