AFAIK, it doesn't exist. The example on that page is just that. Do a Google
search for "Convert PDF to Text" and you'll see mostly Windoze solutions.
BTW, if you go to <http://www.apple.com/macosx/features/applescript/>
you'll see this: "Useful Scripts
Apple provides a variety of AppleScript script examples via download from
the AppleScript website, including script collections for the Finder
Toolbar, QuickTime Player, iTunes, iPhoto and iDVD." However, if you click
on the AppleScript link, you're taken back to the same page. File a bug
with Apple.
