You're going to have a bit of homework to do on this, searching Acceler8yourMac & whatnot but my best guess is that the current video card will simply continue to work. Attaching a monitor or monitors to the second card will likely just cause them to show as additional monitors in System Preferences > Displays > Arrangement. Personally, I'd buy the cheapest graphics card that meets Aperture's specs, but I don't really believe in "upgrading" Macs. My experience is that older Macs retain their value sufficiently well that you can often sell the old one and, together with the price of the upgrade, have nearly enough for a current model. Stroller.
