Retrospect, by Dantz (http://www.dantz.com/), is the best known solution. Apple's Backup 3, part of their .Mac package, claims to do incremental backups. For more start at Apple's home page, click on Made4Mac, and chose "Productivity & Utilities" from the Software list on the left side of the page.
