TIA I don't think that there are any settings that you can change to make Mail less susceptible to malicious messages that might crash it. But I wouldn't run with HTML mail enabled. For one thing, that leaves you open to the spam tactic of sending you an e-mail with a link to a one-pixel graphic. Once your open that e-mail, the graphic is accessed, and the spammer knows that yours is a ripe address for spamming. I don't know that Mail.app is any more or less susceptable to crashes due to malicious e-mail than any other e-mail client. If it doesn't crash often on you, I would just be happy and stick with it.
