I do some graphic design on an iMactel with 2 gigs of RAM and CS1 and it does get slow with Photoshop and Illustrator open at the time. Partly that's due to running in Rosetta but I think you can get by with 2GB but if you can afford more I'd put it in. Getting CS3 and running it natively on the intel would help a lot too. I think the old iMac limit for RAM was 3GB the new ones are 4GB I believe. A MacPro would probably be better in the long run though depending on your budget.
