One way to test whether the Mac has really frozen is to turn on your seconds in your Date/Time panel; if the seconds keep advancing, your Mac is still working. :) You can also launch Activity Viewer prior to initiating the copy; you can see "hung" processes, as they turn red and say that they are hung. If that doesn't happen, it may just be slow, not locked up...
