I've actually found my own answer with a little Googling: "iphone+mobilesync+"Time Machine"" Apparently, there is a .plist entry somewhere that specifically excludes the ~/Library/Application Support/MobileSync directory from being included in Time Machine backups. Ugh!!! Apple, why would you do this?
