Apple's time machine is excellent for your purposes. You still need some sort of archival backup of completed projects/files though. The very nicest thing about Time Machine is that it pretty much just works automatically. You might think about a program like Retrospect and back up to DVDs. The first time through would be painful but after that you will only be doing incrementally changed files which means the backup will go much more quickly. I'd still do a full back up once in a while maybe monthly or quarterly. As Stan Gould said you probably don't have much real need to backup your applications and System files all that often. Once you elimanate those files backing up to remote storage, such as Apple's .Mac is also workable. I use my .Mac storage for offsite backups and it works very well for me.
